Citation: At approximately 07:05 while performing a scheduled Pre-operational sanitation verification task I observed the following. The box that encloses the carcass weight scale that is mounted on the wall beside the hand wash sink had product residue on the interior and on the top surface of the box. I notified Mr. [redacted] of my findings. The box is in a non-product contact zone. No product was involved. Please refer to 9 CFR 416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action. You are herby advised of your right to appeal this decision as delineated by 306.5 and/or 381.35 of 9 CFR.

Regulation:
