Citation: Today at approximately 0835 hours while conducting the review and observation component for operational sanitation I observed the following deficiency involving noncompliance with the Sanitation Performance Standards: A small accumulation of fat, and meat particles in the southwest corner of the slaughter facilities, adjacent to the doorway between the slaughter room and the processing facilities of the plant. The preceding deficiencies did not result in contamination of product contact surfaces or adulteration of product; and has been classified as a Sanitation Performance Standard noncompliance. A review of the establishment’s sanitation form, which had been completed for the day, disclosed that this noncompliance had not been observed or recorded by plant personnel responsible entering such information in the record. Plant management has been provided with oral information concerning this noncompliance; in addition, this noncompliance record provides written notification. This document also serves as notification that failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
