Citation: At approximately 07:00 I asked if he had performed his pre-operational check, Mr said that he had. while performing my pre-operation sanitation check I found the following Non-Compliance.

I discovered numerous pieces of what appeared to be meat and fat particles from a previous day's production on the saw table, inside the top door, on the rolling tray of the meat saw, and on the inside of the upper compartment, and on the upper wheel.

Regulation 416.4(a) states in part: "All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product."

The saw was tagged with U.S. Reject tag #B42 273005 and I notified of my findings, who then took immediate actions to re-clean and sanitize said saw. There has been no production yet for the day so there has been no product adulteration. I removed the U.S. Reject tag after re-inspection and passing the saw for production.


416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
