Citation: At 0:700 after being informed from Mr [redacted] that he was ready for inspection, I performed my Pre-Operative inspection and found the following Non-Compliance.While inspecting the primary Meat Saw, I discovered numerous pieces of what appeared to be dried meat and fat particles from a previous production inside the upper wheel housing. and globs of bone dust located on the back outside of the vertical blade shield. Mr [redacted] was notified of my findings and that there would be a Non-Compliance report issued. The saw was tagged with U.S. Reject tag #B42 273007.Regulation 416.4(a) states in part: "All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product." Mr [redacted] took immediate action to re-clean and sanitize said saw. U.S. Reject tag was removed by my self after re-inspection and passing.There has been no product adulteration at this time.

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
