Citation: At approximately 0900 while performing the unscheduled 06D01 task, the following noncompliance was observed. During the plant tour of the carcass chill cooler, one of the florescent light fixtures has a plastic light cover that had two holes approximately 3" in diameter and several cracks in the light cover. Plant management was unable to meet the regulatory requirements of 9 CFR 416.2(b)(1) stating (b) Construction, (1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions. Plant management was notified verbally that this document serves as written notification that failure to implement immediate/corrective actions and further planned/preventative actions may result in this agency initiating further enforcement actions at this establishment. Mr. [redacted] is also hereby advised of his right to appeal this decision as delineated by 306.5 and/or 381.35 of 9 CFR.
