Citation: On Thursday 01/05/12 at approximately 0430 while performing slaughter inspection duties at establishment 09715 (Dane Fine Meat Packers) I observed the following non-compliance on the slaughter floor. No product was involved.

A stainless steel cabinet with open shelves that is located on the south side of the slaughter floor along the wall had dirt and a greasy substance on the shelves. I also noticed the door handle and under side of the handle of the carcass chilling cooler had a small area of protein build-up starting to accumulate. Mr. [redacted] was immediately notified of these non-compliances verbally and in writing.
9CFR Regulation states: 416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.
416.4(b) Non-food contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

Regulation:
