Citation: On 07/20/2010 at approximately 0720 hours, while performing an unscheduled 06D01 procedure(Facilities and Equipment Standards Audit), I observed the following noncompliance. Floors in slaughter area toward inside wall have several cracks on right side of floor drains, ranging from 1/2 inch to 1 inch wide. Also observed was the outside wall on left side of slaughter floor has an area approximately 5 feet long with a continuous separation from outside wall with 1 to 2 inch gaps, missing pieces and loose concrete from previous repairs. Also observed in this area, below head inspection rack, missing concrete patches and 1 inch separations from walls. These noncompliance's were observed after the establishment completed and documented it's pre-operational sanitation inspection, and no deficiencies were recorded. [redacted] Plant Manager was notified of these noncompliance's. The establishment is in noncompliance with the following regulations: 9 CFR 416.2 (b)(2) which states in part: Walls, floors, and ceilings within the establishment must be built of durable material, impervious to moisture, and be cleaned and sanitized as necessary to prevent the adulteration of product, or the creation of insanitary conditions. 9CFR 416.2(b)(3) which states in part: Walls,floors,ceilings,doors,windows and other outside openings must be constructed and maintained to prevent the entrance of vermin, such as flies,rats,mice, etc. This document serves as written notification that failure to comply with regulatory requirements could result in additional regulatory or administrative action.

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.2(b)(3) Walls, floors, ceilings, doors, windows, and other outside openings must be constructed and maintained to prevent the entrance of vermin, such as flies, rats, and mice.
