Citation: On May 3, 2011 at approximately 1300 while performing procedure code 06D01 after the establishment's pre-operational sanitation procedures were completed, I observed the following noncompliance in the slaughter floor department. Three drop cords hanging from ceiling had visible fat and hair accumulations on them from previous days production. Cords indicated are Splitter Saw cord, and two Hydraulic lift cords. There was no indication that these noncompliance's were identified by the establishment. Slaughter supervisor [redacted] was informed of these noncompliance's. CFR 416.1 states that each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure product is not adulterated. CFR 416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
