Citation: On Monday March 12, at approximately 0645 hours while performing Pre-Operational Sanitation Inspection I observed the following noncompliances in the slaughter floor area: Well saw used on the slaughter floor with a build up of fat and meat on the blade guide. This meat and fat build up covered an area approximately 2 inches square on both sides of the blade guide, and also around the nuts and bolts holding this blade guide onto the motor housing. I also noted that the beef split saw with a build up of fat around the back blade drive wheel. This build up of fat particles covered an area approximately 3/4 of an inch wide and approximately 8 inches long. A U.S. Reject tag #B9353367 was used as a regulatory control measure. Mr. was informed of these noncompliances.


416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
