Citation: At approximately 0600 while performing unscheduled task 01B02, after plant performed preoperational sanitation and prior to the start of operations I observed the following deficiencies: 1) In the packaging room there was an excessive amount of meat, paper debris on the floor. 2) The portable scale that is used when they stuff hams had three pieces of meat approximately 1/4" X 1/4" on the product contact area. I immediately notified Mr. [redacted]. Mr. [redacted] took immediate corrective actions in my presence. No further regulatory control actions were taken. Upon review of plants preoperational sanitation form for 12-12-09-2010 these items were marked acceptable.


416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOPís before the start of operations.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
