Violation: 416.13(c), 416.4(d)

Citation: At approximately 0730 hours; while performing scheduled procedure 01C02, I found noncompliance. The following deficiency is what I observed: In the processing area; one of the gray totes used for edible product was placed on the floor under the skinner equipment. The tote held skin and other product. Some of the skin was hanging over the sides of the tote and touching the non-product contact surfaces around and near the wheels of this equipment. I immediately notified Mr. [redacted] (floor supervisor) of the noncompliance but not before gathering more information concerning the product inside and showing him my finding. I then proceeded to fill out and apply U.S. Retain tag # B36 279342 to the tote and product. Mr. [redacted] (Plant Manager) was called to the finding and after more discussion was notified of this noncompliance. Immediate corrective actions were taken as I went to apply the tag. The regulatory actions taken were relinquished once all necessary actions were taken and verified.


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
