Citation: At 0605 Hr. while conducting the 01B02 procedure I observed the following noncompliance's in the processing room. The table to the stuffer had 1 small leaf on the top surface. 10 blue lugs had fat and meat adhered to the inside surfaces. 4 gray lugs had meat particles inside them. Plant Manager was notified of the noncompliance's at the time of the findings. Plant management took immediate corrective actions. The table top to the stuffer was immediately recleaned and was acceptable for operations at 0612 Hr. The blue and grey lugs were removed into the cleaning area and were recleaned and acceptable for operations at 0640 Hr. No regulatory control action was needed, since the plant took immediate corrective actions. This is a violation of 9 CFR 416.13(c) and 416.4(a).


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
