Citation: At 0845 Hr. while observing sanitary conditions in the plant, I noted dripping condensate from the ceiling on both sides of the overhead cooling unit in the bacon cooler. This condensate was dripping onto 2 skids of slab bacon. This condensate was on 3 slabs of bacon from theone skid and on 12 slabs of bacon from the second skid of bacon. I applied US Retain Tags No. B30 413721 and No. B30 413726 to the bacon skids. I immediately notified Plant Manager of the non-compliance. The SSOP records for operational sanitation were completed at 8:32 AM and no deficiencies were noted. The coolers and freezers are not being monitored on the SSOP records ( SMI-SSOP-FORM-001 and SMI-SSOP-FORM-002). This is a violation of 9 CFR 416.2(d), 416.4(d), and 416.14.


416.14 Each official establishment shall routinely evaluate the effectiveness of the Sanitation SOPís and the procedures therein in preventing direct contamination or adulteration of product(s) and shall revise both as necessary to keep them effective and current with respect to changes in facilities, equipment, utensils, operations, or personnel.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
