Citation: Today when entering the Establishment i took note to a white bump hat on to of the plant refrigerator. The hat was covered in blood from the kill on Friday. I than went to my office and got my white hat and processed to the plant office to look at the pre-op records for today. All entries were marked acceptable. I than went in to the boning room and did my own inspection all items in the boning room was found to be clean and had been sanitized for today. on my way back to the office i checked the employee's knifes and aprons that were hanging on hooks; outside the the cutting room. I pulled the knifes out to look at them and one scabbier and knife was found with dried fat and residue from fridays kill ,along the handle and blade I informed [redacted] of my findings and kevin informed the proper employee's. The knife and hat was cleaned and sanitized prior to use.


416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOPís before the start of operations.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.15(b) Corrective actions include procedures to ensure appropriate disposition of product(s) that may be contaminated, restore sanitary conditions, and prevent the recurrence of direct contamination or adulteration of product( s), including appropriate reevaluation and modification of the Sanitation SOPís and the procedures specified therein or appropriate improvements in the execution of the Sanitation SOPís or the procedures specified therein.

416.16(a) Each official establishment shall maintain daily records sufficient to document the implementation and monitoring of the Sanitation SOPís and any corrective actions taken. The establishment employee(s) specified in the Sanitation SOPís as being responsible for the implementation and monitoring of the procedure(s) specified in the Sanitation SOPís shall authenticate
these records with his or her initials
and the date.
