Citation: Today While performing a check on the outside of the faculties, I found the following items that need to be corrected by the Establishment. The first item is the amount of weeds around the plant. The dock area for both the hide room, offal room and next to the trash receptacle are at least a foot high and very heavily covered. This can provide harborage for rodents and other vermin. I also noticed that above the hide room roll up door. The plant has an old air curtain unit that is not used or possibly may not work anymore. This unit has bird nest and a dead bird carcass hanging down from the bottom of the vents. The other problem is located at the front of the plant where the cooling units sit on the ground next to the plant. The holes that are cut in the block wall for the cooling unit pipes to go through are much larger than the pipe it self, providing a place for birds to find refuge and nesting. This was noticed by the amount of bird feces that had accumulated on the wall and on top of the unit and on the ground directly behind one unit.


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.
