Citation: Upon arriving at the establishment i conducted a scehuled pre-op inspection on the kill floor. On the splitting saw i found fat residue on the blade guides and wheels that the blade runs on, i attached retained tag #B34755908 to the saw. I than checked the Well saw hanging on the wall and also found fat and blood residue on the front of the housing where the blade attaches to the saw, i attached retained tag #BB34755924 to the handle of the saw. At the hand washing area a white hard hat covered in blood was hanging from the soap dispenser, I attached retained tag #B3475509 to the hard hat. When i came threw the front door, a hard hat was sitting on the refrigerator was a blue hard hat with blood smears on it. I attached a retained tag #3B34755910 to this hat. I informed the plant of my findings.[redacted] Came and got me to do a reinspection at approximately 8:00 AM. All Equipment was found to be acceptable and the tags were removed. I than went to the plant office to check the pre-op records and found everything was documented as acceptable when the plant did their pre-op inspection before the start of operation.


416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOPís before the start of operations.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.16(a) Each official establishment shall maintain daily records sufficient to document the implementation and monitoring of the Sanitation SOPís and any corrective actions taken. The establishment employee(s) specified in the Sanitation SOPís as being responsible for the implementation and monitoring of the procedure(s) specified in the Sanitation SOPís shall authenticate these records with his or her initials and the date.
