Citation: At 1300 hrs on the 8th of November, while performing a review of the HACCP records, I observed the following noncompliance: * The plant's Raw Ground hazard analysis, certifying raw pork step, identifies as a control measure, a prerequisite program for certifying pork.The prerequisite programs identifies a Certified Pork Log as the document for maintaining a running inventory of raw and certified pork in the blast freezer. However, the last entry for raw pork placed in the blast freezer was on July 18, 2011, and the last entry for removing certified pork from the blast freezer was on August 4, 2011. [redacted], [redacted] and person responsible for maintaining the Certified Pork Log, advised me that he had no explanation for the lack of documentation. Subsequently, further investigation reveals an inventory of raw and certified pork in the blast freezer. This is a failure of 9 CFR 417.5(a)(1).
