Citation: At 0630 hrs on the 6th of December, while verifying the plant's sanitation performance standards, I observed the following noncompliance: Kitchen * rust forming on the overhead steel steam pipes extending from over the scrapple kettle, down the length of the wall to the rear, and a long the back extending from left to right. [redacted] was advised of the aforementioned noncompliance. The plant's daily sanitation monitoring reports has no documentation reflecting the insanitary condition. This is a failure of 9 CFR 416.1; 416.2(b)(1); and 416.4(b).

Regulation:

416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.
