Citation: At 0600 hrs on the 21st of December, after the plant concluded their preoperational sanitation inspection, while performing preoperational sanitation verification, I observed the following noncompliance: Processing Room * organic matter on the underside of a scale pan and legs of the scale stand adjacent to the flaker; * numerous pieces of meat and fat on the wall adjacent to the parts wash sink; * organic residue on 2 stainless steel roll carts used to hold/transport meat lugs;* mold on the wall and water drain pipes behind and adjacent to the parts wash sink; * rust on the stainless steel stuffing table and small table adjacent to grinder #2. Wet metal parts are stored on the tables overnight, and the rust drips from the parts onto the tables. [redacted], was advised of the aforementioned noncompliance. The plant's daily sanitation monitoring reports has no documentation reflecting the insanitary conditions. This is a failure of 416.4(b). Subsequently, the scale pan, scale stand, roll carts, two tables, wall and pipes were cleaned and sanitized immed iately. No official control action was initiated.

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
