Citation: Inspection personnel received a Notice of Receipt of Adulterated or Misbranded Product from a USDA facility (20608) in North Carolina, for the shipped dates of 8/30 and 9/3, stating that combos of hams and shoulders received from Establishment 20760 (USA Pork Packers) contained numerous small black hairs, numerous unidentifiable black specs as well as hair, dirt and grease smears. The product that was shipped is considered adulterated. The product was reconditioned at the receiving establishment. A meeting was held with plant management to investigate the potential cause of the adulteration. The combos that were shipped were not sealed and the product most likely became adulterated during shipping. This is a violation of 416.4(d) which states that Product must be protected from adulteration during processing, handling, storage, loading, unloading at and during transportation from official establishments.
