Citation: At approximately 0700, while performing preoperational inspection, multiple deficiencies were found.. In the slaughter floor area: 1.In the blood room, 10 dot sized black particles were found on the corner of two shelves of the metal stand 2.The bottom of the wooden pallet that was in that room contained a six inch by two inch area of dried blood and there were too numerous to count globules of fat on the pallet 3. The plate under the dehairer machine had a two inch by 5 inch area with hair and brown particles. The table after the dehairer machine also contained about twenty dot sized black specs. 4.The head drop cutter had four particles of fat ranging from 1/8 inch to one inch in size. In the Processing room: 1. A one inch area of rust was found on the blade of the large band saw. 2. Three razor blades that were rusting were found in the hand washing sick 3. Approximately 10 dot sized black specs were found on the end of the conveyor table. A US reject tag was not applied to the equipment since all were cleaned and sanitized in my presence. QC [redacted] then Mr. [redacted] Jr. was notified of the noncompliance. The establishment is in a violation of 416.4(a), 416.4(b), and 416.13(a). Regulation:

416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOPís before the start of operations.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
