Citation: On December 21, 2010 at approximately 0650 hours while performing pre-operational sanitation inspection prior to the start of operations but after the plant had completed theirs I found the following noncompliance: The white cutting boards in the processing room with a yellowish brown slime on the underside of them covering the outer edge of these cutting boards. This outer edge was approximately two to three inches in width almost completely circumferencing the entire boards on the underside. There were six of these white cutting boards observed to have this yellowish brown slime on them. They ranged in size from three feet square to approximately eighteen inches wide to eight feet long. No regulatory control action was taken because as soon as the plant was notified they took immediate corrective action to clean and sanitize these six white cutting boards!! Ms. [redacted] QC was informed of this noncompliance. 9 CFR 416.4(b) States in part that that all non-food contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. 9 CFR 416.4(d) States in part that product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
