Citation: On December 22, 2010 at approximately 0710 hours while performing Pre-Operational Sanitation inspection prior to the start of operations, but after the plant had completed theirs, I observed the following noncompliances on the slaughter floor: Steam kettles used to heat treat the blood with a build up of foreign material in the drains and valves on the drains. This build up completely covered the inside of this drain, valve and elbows. I also noted an inedible chute by the inspection station that has a build up of gray/black foreign material near the bottom of the chute approximately 1 inch thick and approximately 18 inches square. Ms. [redacted] QC was informed of these noncompliances. 9 CFR 416.4(b) States in part that that all non-food contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. 9 CFR 416.4(d) States in part that product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
