Citation: On December 29, 2010 at approximately 0705 hours while performing Pre-Operational Sanitation inspection prior to the start of operations, but after the plant had completed theirs, I observed the following noncompliance on the slaughter floor: The side rail switch, I-beam and rail area immediately after the inspection station with meat and fat particles. These meat and fat particles are sporadically dispersed on an approximately a three foot area of this switch, rail and I-beam area ranging in size up to one quarter of an inch. Ms. [redacted] was informed of this noncompliance. 9 CFR 416.4(b) States in part that that all non-food contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. 9 CFR 416.4(d) States in part that product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
