Violation: 416.13(c), 416.4(a), 416.4(b), 416.4(d)

Citation: On January 11, 2011 at approximately 0655 hours while performing Pre-Operational Sanitation Inspection prior to the start of operations, but after the plant had completed theirs, I observed the following noncompliances: 1. The moving boning table in the processing room with a build-up of fat under the stainless steel lip where the slats come up from underneath near where the loins are pulled. This fat build-up was approximately 3/4 of an inch wide and 24 inches long and approximately 1/8 of in inch thick. 2. Digital scale at the end of the moving boning table with multiple meat and fat particles underneath the platform. These particles were too numerous to count and sporadically covered the entire under surface of this scale platform. They ranged in size from 1/8 inch to 3/16 inch. Ms. [redacted] QC was informed of these noncompliances. No regulatory control action was taken since the plant took immediately action to correct these noncompliances. 9 CFR 416.13(c) States in part that each official Establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. 9 CFR 416.4(a) States in part that all food contact surfaces including food contact surfaces or utensils, and equipment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. 9 CFR 416.4(b) States in part that that all non-food contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. 9 CFR 416.4(d) States in part that product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
