Citation: On Friday May 4, 2012 approximately at 0700 hours while exiting the cutting floor from the side door and entering the middle cooler I found condensation was dripping from the red metal rail next to the side entrance of the cutting floor on three market hogs carcasses. I affixed my retain tag # B43736021 on the carcasses. I informed QC Personnel that those carcasses need to be rewashed again. I saw her and kill floor supervisor washing the three carcasses, then I removed my tag after I made sure all carcasses were rewashed. Also, when I was doing the task SPS in the big cooler to check the ventillation., I found the far 2 metal rails were dripping on 44 roasters and I saw a lot of ice on those rails and it was melting and dripping on the roasters. I applied my retain tag # B43736047 on the 44 roasters. QC Personnel was informed of the non compliance. The establishment is not in compliance with 9 CFR 416.1 which states Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.and 9 CFR 416.2(d) which states Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.[newline]This NR was linked to NR# YKM 4707031007N/1 dated 03/07/2012. Prior corrective action was not effective to prevent the occurance of the non compliance.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
