Citation: On 9/24/10 at approximately 0900 while performing procedure code 03H01 I observed that the Heat treated , not fully cooked record was not up to date . Last entry on record was 8/24/10 , there had been product produced after that date . Establishment was slicing and packaging heat treated not fully cooked product on 9/23/10. Meat and poultry regulation 9CFR417.5(b) states that each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded and shall be signed or initialed by the establishment employee making the entry. Failure to control and or eliminate this type of noncompliance could result in further regulatory and or administrative control measures.
