Citation: On 2/7/2011 at approximately 0650 while performing procedure 01B02, I observed the following noncompliance. The smoker had fat and juices built up on the floor, the walls and the area surrounding the seal were covered with a thick black film. It states in the SSOP that [redacted] I informed of this noncompliance. This noncompliance does not meet the regulatory requirements of: 416.13 Implementation of SOP's. (a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP's before the start of operations. (b) Each official establishment shall conduct all other procedures in the Sanitation SOP's at the frequencies specified. (c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.

416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.

416.13(b) Each official establishment shall conduct all other procedures in the Sanitation SOP’s at the frequencies specified.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
