Citation: After the plants pre operational sanitation inspection and prior to the start of operations, the following non-compliances were observed in the processing/packing room this morning: The tumbler had product residues on the interior areas covering several square inches around the loading/unloading opening. The stuffer had an area of dried product residues covering an area approximately two square inches on the interior area of the throat just prior to the auger. I notified that the units were rejected, US Reject tag #B30643425 applied, at 6:05 am. The requirements of parts 416.13(c) and 416.4(a) of 9 CFR were not met. Non-compliances were on product contact surfaces from a previous days operation. The plants SSOP monitoring form was not yet available, but I was verbally notified by that the area was ready for production prior to my inspection. The items were reinspected after the plants corrective actions, found acceptable and released at 7:00 am.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
