Citation: While performing procedure 01B02, the following facilities non-compliance was observed in carcass cooler #1 this morning at 6:00 am: The interior of the carcass entrance door, and the wall on the right, adjacent to the cooler entrance has some ufm residues extending from the floor up approximately 12 inches. There is an opening in the floor, where a drain had been previously but has been sealed, creating an area about 3 inches across and several inches deep where blood, etc. can accumulate but not drain away. The wall area at the exit doors exhibits some flaking paint about 12-18 inches above the floor, affecting an area about 24 inches long. The area was shown to and discussed with this morning. The requirements of part 416.2(b)(2) of 9 CFR were not met.


416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
