Citation: At 0945 today while inspecting the carcass cooler I observed that condensation had accumulated on the ventral surface on the drip pan below the cooling unit ,and on some pipes in that area. The area affected is in the northeastern area of the cooler nearest to where the hot carcasses enter from the kill floor. I notified of the condition and she notified To prevent product adulteration I applied Reject Tag number 7374483 to the Chad unit to prevent more carcasses from entering the cooler. NR number 0004-2010 was written for the same condition on 10-5-2010. That NR has not yet been answered . This is a recurring deficiency. Your previous corrective action of adding fans and moping the affected condensation from the overhead structures has proven to be ineffective at preventing a recurrence. I reinspected the area at 1045 when told me the problem was corrected. I observed no condensation and removed my Reject tag at that time.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
