Citation: Today while reviewing your HACCP Plan for Beef Slaughter I observed on page 10, Process Step 16 (Pre-evisceration Antimicrobial), your statements that "[redacted]." I then went to your SSOP and viewed your Preoperational and Operational Procedures and only found two references to 'Lactic Acid' on page 5 (h) and (i), where you say that [redacted] I then reviewed your Preoperational and Operational Inspection SSOP Records and found no reference to Lactic Acid. Therefore no records are being kept of Lactic Acid use or concentrations contrary to the statements in your HACCP Plan for Beef Slaughter. I talked to and and informed them that they have failed to implement these sections of their HACCP and SSOP Plans for Beef Slaughter.

Regulation:

416.13(b) Each official establishment shall conduct all other procedures in the Sanitation SOP’s at the frequencies specified.
