Citation: At approximately 0555 this morning while performing Pre-operational sanitary inspection in your Fab Dept I observed rust above the "dog" that pushes your trolleys on the overhead rail. This rail supplies meat to your Fab Dept from the cooler. I applied to the Fab door Reject Tag # 737437. At about 0620 while performing Pre-operational sanitary inspection on the evisceration side of the Harvest Dept, I observed rust on the metal above the 'dog' on the chain (overhead rail) that carries the eviscerated carcasses through the trim and Chad areas. I rejected the chain using Reject Tag number 737438. No product was present in either Dept. The Fab area was ready for re-inspection at 0615 and I inspected the metal in question and found that the company cleaned and oiled the metal. I removed the Tag at 0620. The chain in the Harvest Dept was cleaned and oiled. I re-inspected the area at 0815 and found the area acceptable. I removed the Tag at 0820. Reg 416.2(b)(2) )states that "walls, floors, ceilings within the establishment must be built of durable materials.....and be cleaned and sanitized as necessary to prevent adulteration of product....."

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
