Citation: Today while touring the facilities I observed, at approximately 0925, some areas of dry rust above product on the head chain and redirectional pullies. No rust was observed on product but the potential was present. I took regulatory control by applying a "US Reject" tag to the chain (#737120) and informed An employee then oiled and wiped down the pully, underside of the structure and chain to prevent rust from falling onto product. At 0940 I removed the tag after observing that the area where product was present under the chain had been cleaned and oiled. Then the cleaning and oiling of the chain proceeded as the chain approached the area where the heads and tongues were placed on the hooks below the chain. This person oiled and cleaned the entire chain as it passed the location where he was working. On Sept. 14, 2011 you received an NR for the same rust on the same chain. Your preventive action response was"Maintenance manager added the hooks to the 'head chain' weekly PM task to be wire brushed and cleaned of all excess oil." This preventive measure has not prevented the rust from causing a potential contamination source for the product on the chain.

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
