Citation: On January 23, 2012 at approximately 0715 hours while conducting pre-operational sanitation procedure, but after the plant had performed theirs, the following non-compliances were found: 1) The blades of 3 hand saws had rust covering approximately 40-50% of the blade on both sides. 2) The head chain was dripping a brown-black substance that appeared to be rust mixed with oil. Part of that substance was running down some of the head hooks. 3) The Chad cabinet had fat residue along the inside metal tubes. 4) Small amount of condensation was present above the final rail. was notified of the noncompliance. No regulatory control action was taken because all of the areas and equipment were cleaned and sanitized in my presence.

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
