Violation: 417.3(c), 417.5(a)(3)

Citation: At approximately 0710 hours this morning I was observing the measurement of the PAA concentration as part of a slaughter HACCP task. The QA employee measured the PAA by counting drops, indicating a concentration of ppm PAA, which is above the critical limit of 150-220 ppm PAA. The employee documented the drops, and indicated his corrective actions were to wait for the system to flush out. After approximately 5 minutes, he measured the concentration again and counted drops. This corresponds to a value of ppm PAA, which he documented by writing over the to show and writing in the row "retest." The QA employee did not document corrective actions on the corrective action record, as stated in the HACCP plan. These are non-compliances with 9 CFR 417.3(c) and 9 CFR 417.5(a)(3).  

Regulation:

417.3(c) All corrective actions taken in accordance with this section shall be documented in records that are subject to verification in accordance with 417.4(a)(2)(iii) and the recordkeeping requirements of 417.5 of this part.

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
