Citation: On Thursday March 1. 2012 during the performance of a Slaughter HACCP Task observed the following Noncompliance. A review of the Establishments Slaughter HACCP Forms (101) indicated that the results for the Monitoring of CCP -1, Zero Tolerance, Carcasses and Beef Offal (Tongues/Hearts/Livers) were not documented in the form of a quantifiable value and thus does not meet the requirements of 9CFR 417.2(c)(6) Provide for a recordkeeping system that documents the monitoring of the critical control points. The records shall contain the actual values and observations obtained during monitoring.; 417.5 (a)(3) Provide for a recordkeeping system that documents the monitoring of the critical control On Thursday, March 01, 2012 during the performance of a Slaughter HACCP Task observed the points. The records shall contain the actual values and observations obtained during monitoring..The results had been documented as Pass or Fail (Pass = No Contamination observed, Fail = Contamination observed).I Informed both the kill floor supervisor and Production Supervisor of the onconmpliance both verbally and in writing with this Noncompliance Record

Regulation:

417.2(c)(6) Provide for a recordkeeping system that documents the monitoring of the critical control points. The records shall contain the actual values and observations obtained during monitoring.

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
