Citation: On 10/01/2010, at approximately 1330 while performing task code 06D01 the following noncompliance's were observed. The freezer entrance off the offal packing area in the processing area has a build up of ice on the seal and on the outer casing, a build up of ice crystals on the inside of the door casing and two pipes that run up the side of the casing, a build up of ice crystals on the floor inside the entrance. There are two white tubs in the freezer that pass through the door which have ice to pre chill the veal livers prior to packing which has the potential to become contaminated with the ice crystals when passing through the door. The white tubs did not contain product. The back entrance to the freezer on the outside has a build up of ice on the right and left of the entrance and the whole length of the sliding door on the bottom, on the inside of the door and on the casing of the door there is a build up of ice crystals along the top of the door, ice crystals hanging from the ceiling of the freezer to the right as you enter. In the weighing area the fan covers above the door to the cooler and above the scale area are coated with dust particles. Product has the potential to become contaminated if the dust debris becomes airborne. In the veal holding cooler the paint on the beams above the rail system is bubbling up and in some areas rust is visible. Fan covers in this area also have dust debris on them. These noncompliance's have the potential to contaminate product. 416.1 General rules. Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 416.2 Establishment grounds and facilities. (b) Construction. (1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
