Citation: As a result of a Food Safety Assessment performed at your establishment the following noncompliance's were observed: A. Plant management was asked for documentation associated with the selection of each CCP. The establishment did not provide documentation associated with the selection of each CCP. This is noncompliance with 9 CFR 417.5(a)(2). B. Plant management was asked for documentation explaining why the selection of the location of each CCP. The establishment did not provide documentation explaining why the establishment selected the location of each CCP. This is noncompliance with 9 CFR 417.5(a)(2). C. Plant management was asked for documents supporting the verification procedures and frequencies listed in the HACCP plan. The establishment does have supporting documentation for the procedure used for calibration. Supporting documentation used is "Thermometer Calibration Guide" from [redacted] and a document called "Thermometer Calibration" from [redacted]. These documents do not have support for the frequency of calibration done at the establishment. Management did not provide support for the verification frequencies listed in the HACCP plan. This is noncompliance with 9 CFR 417. 5(a)(2). D. Establishment management was asked to provide documents supporting the monitoring procedures and frequencies listed in the HACCP plan. The establishment management did not provide documents supporting the monitoring procedures and frequencies listed in the HACCP plan. This is noncompliance with 9 CFR 417.5 (a)(2). Failure to control and or eliminate these types of noncompliance's could result in further regulatory and or administrative control measures.

Regulation:

417.5(a)(2) The written HACCP plan, including decisionmaking documents associated with the selection and development of CCP’s and critical limits, and documents supporting both the monitoring and verification procedures selected and the frequency of those procedures.
