Citation: As a result of a recent Food Safety Assessment conducted during the time frame of 11/02/2010 to 12/03/2010, the following deficiency was found: The establishment lists on its HACCP plan for corrective actions for both CCP1B and CCP2B that " [redacted] ". The HACCP plan does not state who is assigned responsibility for corrective actions taken, does not address how the cause of the deviation is identified and how it will be eliminated, does not address measures to prevent recurrence, or addresses prevention of product injurious to heath or otherwise adulterated as a result of the deviation from entering commerce. These are noncompliances with 9 CFR 417.3 (a), 9 CFR 417.3(a)(1), 9 CFR 417.3(a)(3), 9 CFR 417.3(a) (4). 417.3 Corrective actions. (a) The written HACCP plan shall identify the corrective action to be followed in response to a deviation from a critical limit. The HACCP plan shall describe the corrective action to be taken, and assign responsibility for taking corrective action, to ensure: (1) The cause of the deviation is identified and eliminated; (3) Measures to prevent recurrence are established; and (4) No product that is injurious to health or otherwise adulterated as a result of the deviation enters commerce. Failure to control this type of non-compliance could result in further regulatory and/or administrative control measures.
