Citation: On 03/30/2011, while performing task code 06D01, the following deficiencies were observed. In the cooler area at carcass spray position, there was a hole in the wall about 1/2 in. in circumference. Upon further investigation , I noticed that there were several more small holes in the walls around the dressing floor. At the head boning table there was also a large part of the wall on the corner that had several pieces of block knocked out, thus leaving a large hole in the wall. This non-compliance is in violation of CFR 9 416(b)(2) (2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
