Citation: On 5/13/2011, at approximately 0710, while performing task code 01B02, I observed the following noncompliance: The pluck table had a build-up of some foreign substance in two of the corners. I asked if he had performed his pre-operational sanitation inspection and he replied that he had. I informed of this noncompliance and he immediately cleaned and sanitized the table. This noncompliance does not meet regulatory requirements of: 416.4 Sanitary operations. (a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. 416.13 (c) Each official establishment shall monitor daily the implementation of the procedures in the sanitation SOP's.
