Citation: As a result of a Food Safety Assessment performed from November 7, 2011 to December 16, 2011 at your establishment, the Veal Slaughter HACCP plan, pre-requisite programs and the associated records dated from September 12, 2011 to November 8, 2011were reviewed and the following noncompliances were found in the HACCP program: In the HACCP plan for CCP#2 – Intervention Spray, management did not include the critical parameters and monitoring procedures of the psi, temperature and application [redacted] in their supporting documentation for that CCP. *This does not meet the regulatory requirements of 9CFR 417.2(c) (3)(4).* § 417.2 Hazard Analysis and HACCP Plan. (c) The contents of the HACCP plan. The HACCP plan shall, at a minimum: (3) List the critical limits that must be met at each of the critical control points. Critical limits shall, at a minimum, be designed to ensure that applicable targets or performance standards established by FSIS, and any other requirement set forth in this chapter pertaining to the specific process or product, are met; (4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
