Citation: On June29, 2010 at approximately 12:30 p.m. while performing a scheduled 03B02 Raw-Ground procedure I was reviewing the establishment's records for the daily calibration of it's thermometer. (As prescribed in it's HACCP Plan). I noticed that it had not yet been performed for this day and upon closer examination it was not performed and/or recorded for the previous day (June 28th). I notified plant owner Glenn Finkenbinder of this and he promptly prepared a cup of ice water as prescribed in his plan and calibrated the thermometer in my presence. I observed it to be within the 32 degree parameter, therefore it was still properly calibrated. I also noted to that his form states[redacted] There are no records for hot thermometer calibration listed. I questioned about this and he stated he no longer uses a hot thermometer as there is no longer a smokehouse.

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
