Citation: Today while looking over the records produced from the prier days kill. I noted that the plant writing in the records for the time duration for there lactic acid pray time. I ask the plant why the plus sign was written in with the and they stated that some times they spray seconds, seconds, but since they only had to spray a minimum of seconds that is all they put down. I informed that he need to put the seconds in as a whole number, if he sprayed 68 seconds then he need to write that value in for the lactic acid spray time according to 417 (a) (3)


417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
