Violation: 416.13(c), 416.2(d)

Citation: This morning at approximately 7:10 a.m. while performing a pre-operational sanitation task, the following non-compliances were observed:[newline]The inside of the plastic band saw cover had many discernable pieces of dried residue from the prior days use.  2 of which were about 1/8th of an inch in diameter.  The side of the band saw that is against the wall had dried residue from prior use along the entire top half of the saw and had collected on the electric cord that enters in to the saw from the power source, as well.  Also, the hamburger patty machine had a small piece of dried residue on a plastic component (direct product contact surface).[newline]Also observed, upon entry into the carcass cooler door that leads from the kill floor area, approximately 20-30 drops of condensation have collected on the overhead rail and cooling unit.  Although no product was currently directly below the condensate, this could lead to potential product contamination and is a failure to meet the Ventilation requirement 416.2(d) of the Sanitation Performance Standards.[newline]I notified Plant Owner Mr. Glenn Finkenbinder of these non-compliances and equipment was cleaned and sanitized prior to the start of operations.  No Regulatory Control Action was taken.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
