Violation: 310.18, 417.2(c)(4)

Citation: At approximately 1430 hours on 02/01/2011 while the slaughter inspector was performing a zero tolerance fecal inspection she found a thick one inch by three inch fecal smear on the split hip bone of a bob veal. The animal was immediately tagged with a U.S. retained tag #46223046 with back tag 23 EF 6778. This is in violation of ( CFR 417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits; 9 CFR 310.18 Carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter; however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.The trimming associate was showed the deficiency and he trimmed the affected part and returned the carcass for inspection. The carcass was then cold water washed, hot water rinsed at [redegrees "F" and then sprayed with lactic acid before being put into the chill cooler. was informed of this noncompliance verbally and in writing with this noncompliance report. A followup 03J02 was performed and no deficiencies were found.

Regulation:

310.18(a) Carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter; however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits
