Citation: At approximately 0900 hours on Friday 03/04/2011 while preparing a salmonella sample I found the following 06D01 deficiency in the freezer. Three approximately sixty pound boxes of frozen meet were placed in the freezer directly on the floor with no pallet. was informed verbally and in writing of this noncompliance. This is in violation of 9CFR 416.1, Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. And 9CFR 416.4(d), Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments. Product in the boxes was in plastic and sealed boxes. The product was checked for any signs of contamination, wet spots, holes in boxes or broken seals and none were found. No product contamination was involved in this noncompliance. No previous similar noncompliance's were found in the last sixty days.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
