Violation: 416.1, 416.2(d)

Citation: At approximately 12:30 pm on April 20, 2011 while performing a scheduled PBIS task 06D01 the following noncompliances were observed. The doorway separating the cooler from the boning room there is beaded condensation in an area approximately 2' x 1' area (no product involved). In the cooler on the left side where the carcasses pass through to the holding cooler there is beaded condensation on the ceiling in and area approximately 1' x 1' section (no product involved). On the right side of the cooler where the evaporator is located there is beaded condensation on the ceiling, on the front of the unit and on the underneath of the unit (no product involved). Mr. was verbally notified of the above noncompliances. This is a violation of part 416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided. I then reviewed the NR file and found no similar noncompliance report of this nature.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
