Violation: 416.13(c), 416.4(b)

Citation: At approximately 0800 hours on Thursday 04/01/2011 while performing a scheduled 01B02 procedure, after the establishment said they were ready for pre-op, I found the following deficiencies. In the boning room the table frame was found with meat and fat residues from the previous day production on the supports. A knife also had meat and fat residues on the handle. No tag was attached as the employees recleaned immediately. The equipment was presented for reinspection and found acceptable. was informed immediately of this deficiency verbally and in writing with this noncompliance report. This is in violation of 9 CFR 416.13(c) each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. 416.4 equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. A review of the non compliance record indicate no recent noncompliance of this nature.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
